Along with saffron, vanilla is one of the most precious spices. It has a heady, intoxicating smell and adds a special touch to desserts.

It is found in rainforests  in places like Madagascar, Bali and Mexico and grows together with cacao.  Vanilla is excellent for the immune system  and said to soothe anxiety. By this we mean the real pod, not vanilla extract.  Commercial vanilla extract usually contains alcohol and may include other solvents

and additives.

 Fascinating facts: There are 30 000 orchid varieties but only one makes fruit!   We associate vanilla with the colour white when in actual fact, the pod and seeds inside are black!

Use:   You can either open up the pod and scrape out the seeds, using them in desserts and smoothies or else just cut the pod into small pieces and grind. The latter method does not always break down the stick.  It is best to refrigerate the pods.
